Harvesting and production technique
The grapes are harvested with an early harvest in order to safeguard the acidity and reduce the alcohol content. Fermentation is carried out at a temperature of 17°C in order to enhance the delicate aromas. The second fermentation takes place according to the Charmat method in large containers and lasts for 45 days with the aim of creating a light foam and a very fine perlage in the wine.
Organoleptic characteristics
Colour: pale straw yellow.
Bouquet: fragrant and aromatic with reminiscence of apple and the scent of white flowers.
Flavour: the lively froth is pleasant and the sensation of freshness ends in softness for the right amount of sweetness.
This is a classic aperitif wine, also used to accompany light first courses or seafood cuisine.
Obtained from Glera grapes grown on the winery soils.
